Apple Pie Chia Seed Pudding
A cozy, high-protein breakfast that tastes just like your favorite dessert.
This Apple Pie Chia Seed Pudding makes breakfast feel like you’re having dessert first. With layers of creamy chia pudding, tender cinnamon-maple apples, and 26 grams of protein, it’s a nourishing breakfast that will keep you full and satisfied all morning long.
If your mornings are hectic, this recipe is for you. It comes together with minimal effort and can be prepped ahead of time, making it an easy grab-and-go option for busy weekdays. No need to skip the most important meal of the day when you have something this delicious waiting in the fridge.
With just a handful of simple ingredients, this pudding turns into a nutrient-dense meal that satisfies, fuels, and truly gets better with every spoonful.
Chia seeds: These tiny seeds are packed with fiber and omega-3s, helping support digestion, stabilize blood sugar, and provide long-lasting energy. Once they soak, they create that thick, pudding-like texture we’re after.
Protein powder: Adding protein powder boosts satiety and helps you hit your daily protein goals. I use Orgain vanilla protein powder for its smooth texture and flavor. You can use code COOPSKITCHEN for 20% off your order.
Milk: Milk is essential for allowing the chia seeds to absorb and thicken properly, creating that ultra-creamy consistency. I love using a high-protein milk to elevate the macros even more.
What truly takes this chia pudding to the next level are the warm, caramelized apples. Cooked with a touch of maple syrup and cinnamon, they become soft, sweet, and reminiscent of the filling in a freshly baked apple pie.
It’s simple, cozy, and tastes far more indulgent than it actually is—which is exactly how breakfast (and snack time) should be.
How to store: You can use any airtight container you have! I like to use 32 oz glass mason jars. The metal lids they came with rusted over time, so I switched to these plastic ones — and they’ve held up great! These are good for up to 5 days in the fridge.
Don’t skip the toppings! You can use any of your favorites — mine include walnuts, pecans, other nuts or granola.
